They aren't going to add a knife sharpener, and regardless, they wouldn't provide a dull knife.
Nor does the knife get dull upon use.

There shouldn't be a need for a knife sharpener as they wouldn't want the game to turn out too realistic. I'm pretty sure they would give you a forever sharp knife.

I agree, the game only has a certain amount of reality within it.
The other percentage is simply to balance the imbalance-ness of the amount of reality.
