The official Mario and Sonic at the Olympics website is up Link
Still no EU release date, although it does say "Coming holiday 2007." So could mean anything.

"You can chose from all of your favorite Mario and Sonic characters. Each character has a different level of expertise, all-around, technical, speed, and power. Here’s how it breaks down:
* Mario (All-Around)
* Peach (Technical)
* Yoshi (Speed)
* Bowser (Power)
* Sonic (Speed)
* Knuckles (Power)
* Tails (Technical)
* Amy (All-Around)
Game Modes
There are different game modes to choose from:
* Single Match - You pick a specific discipline to play.
* Circuit - Participate in a series of events trying to beat your opponents with the highest overall score.
* Mission - Conquer character specific challenges
Olympic Events
Mario and Sonic at the Olympics
You can play all of your favorite sports from the Summer Games:
* Track & Field
* Archery
* Table Tennis
* Gymnastics
* Skeet Shooting
* Swimming."
